1/2 cup oil
2 eggs
1/2 cup sugar
2 cups flour
1Tbs. baking powder
1/2 tea. salt

Combine milk, oil, eggs, and sugar.
Add remaining ingredients, stirring only until flour is moist.
Line muffin pan with paper cups.
Bake at 350 degrees for 20-25 minutes
If desired, dip tops of muffins in melted butter, then cinnamon sugar.

I've had this week off from work,
so I had plenty of time for some cooking and baking.
These muffins went over to my daughter's home.
She's 28 weeks pregnant.

It was my Simple Pleasure to help out this week
by being creative in my kitchen.
