Week in Review - Spring Break revisited



How do I cram in all that I did while on Spring Break?
Lots of pictures, that's how!

I highly recommend the movie, Secretariat.
A movie for the whole family.


 I baked and cooked almost everyday.

Here is my newest baking experiment.
Peanut Butter Cookies with NO flour.
These cookies are sooooo easy!
Recipe:
•1 cup creamy peanut butter, not natural-style
•1 cup granulated sugar
•1 large egg

Preparation: Pre-heat the oven to 350°F.
Combine all ingredients in a bowl. Stir with a wooden spoon until combined.
Roll the dough into approximately 1-tablespoon-size balls and place on ungreased cookie sheets, about 1 inch apart.
Use a fork to press down on the balls and make a cross hatch pattern on each.
Bake the cookies, rotating the racks halfway through, for 10-12 minutes, until puffed and golden. Let cool for a few minutes on the sheets, then remove with a spatula.

My Spring Break was like having a Saturday, all week.
Back to work tomorrow.
I'm rested and ready for the end of the school year.

  1. Looks like so much fun! We saw "Secretariat" too and really enjoyed it . I like the easy peanut butter cookie recipe. Thanks for sharing. Hope your next week at work goes well for you.

    It looks like you have a great spring break, like your idea that it is like a Saturday all week!
    Wayne and I will be taking somedays off next week, however... it will be to gut the new house. Hopefully we can make time to go down the street for coffee together! We watched Secretarariat last weekend and found it to be wonderfully inspiring! Have a great week my friend!

  5. Looks like you had a blast!! You visited so many beautiful places!! It must be so amazing to live near all those wonderful places to go see!! That waterfall is just awesome!! What a display of God's amazing power!! :)
    That peanut butter cookie looks so TEMPTING...my Gram always used to make the ones with the Hershey's kisses in the middle. My fave. :) :) :)
    A week of Saturdays does sounds great to you school-house folk...But I'm looking forward to MY "Saturday," tomorrow!! :) Starting with Dayton at 8 AM. It's supposed to be 80 here. I can't wait to soak up some sunshine. :)

  9. I love your "what I did over spring break" post. Sounds like it was a relaxing break. I'm positive that you needed one, too. Schools can suck the life out of you, can't they?

    I am going to put those cookies on my MUST TRY list. I wonder if you could do them with Splenda, too. Then, they would be totally guilt free. Woohooo!

  12. Christine, I loved getting to tag along on your spring break! Looks like you enjoyed every moment of it! Kim looks so cute! Can't wait to hear of Ila's arrival... we are looking forward to our Baby Boy arriving, too (though so far he is just Baby Boy). Hope your days back at work are going well.
