Summer Salad

Susan Branch is one of my favorite illustrators.
It's called Pasta Salad.
Simple and soooo delicious.

Lots of fresh vegetables!
Cork screw pasta and cheese tortellini.
Ummmmm good.

Pasta Salad

1 lb. corkscrew pasta
1/2 lb tortellini with cheese
1/2 C. plus 1 Tbs. olive oil
6 cloves garlic minced
1 bunch broccoli, in small flowerettes
2 med. zucchini, sliced & quartered
1 1/2 snow peas (or frozen)
2 sweet red peppers, chopped
1 green pepper, chopped
1 6oz. can pitted black olives
4 tomatoes, chopped
1 C. Parmesan cheese, grated
1/2 C. Romaon cheese, grated
freshly ground pepper

Cook the pasta according to package instructions. Drain & put into a large bowl.
Pour oil into saucepan; add garlic & cook slowly till garlic is light brown.
Set aside to cool.
Lightly blanch broccoli, zucchini, and snow peas ~ refresh in cold water & set aside. Toss the pasta with garlic oil~ add rest of ingredients & toss very gently.
Serve

Two things of importance: don't let garlic get dark-colored while cooking in oil AND don't overcook the blanched veggies~ they should be firm in shape, but tender to the bite.
Best served at room temperature.

    As for this, it looks delicious, especially with the tortellini included. I am not one of those "just throw it in and it will taste good" pasta salad cooks. I wish I were, but I need a recipe.

  9. This sounds so good! I would love to try it, but my hubby and I are both allergic to cheese. I'm going to try to figure out what to substitute for the cheese part. The rest looks super yummy.
