Foodies and Cuties

Tom and I are joining our daughter
 and her family,
by going Gluten Free.
Not an easy endeavor!

On top of that, 
Tom and I are challenging ourselves to
follow the Whole30 Diet.

We are at the half-way mark.

We haven't eaten:
Dairy
Sugar
Alcohol 
Grains
Legumes
or anything processed!
 ( It's basically the Paleo Diet )

Here are some of the new recipes that we 
have learned to like and want more of.

Muffins:
Recipe:
2 cups Almond Flour
4 large eggs
1 C. mashed bananas
1 C. pumpkin, canned (1/2 can)
1 C. olive oil
1 t. salt
2 t. baking powder
1 C. blueberries
1 t. cinnamon, ground
1/2 t. cloves, ground
1/4 t. nutmeg

Heat oven to 400 degrees.  Lightly beat eggs.  Add oil, pumpkin, and mashed bananas together. 
In a separate bowl, combine almond flour, salt, baking powder and spices. Add wet ingredients to the dry ingredients and mix until combined. Add blueberries. Fill muffin tin to the top and bake for about 30 minutes. Muffins will be tender. Cool on wire rack and store covered in the refrigerator.

Our 6 year old grandson LOVES these!
I leave them out on the table and they are gone!

 Cauliflower Rice:
Recipe:
One head of cauliflower, cut into small flowers
Put into a food processor
Chop until the consistence of rice.
Ta Da!
Now use  just like you would rice!

But it's not always about food.
We went to a semi-pro 
Baseball game in Boise,
one hot, summer, evening.
"Take me out to the ballgame".
First time for some of us to experience a baseball game.
We had so much fun.

  1. I would never be able to do that diet. I would starve. With all my allergies I wouldn't be able to eat anything. Are you feeling better since you've been on this diet?

  3. Morning, Sounds like this is a completly new way of filling your tummies! Yes a ballgame sounds like a lot of fun!
    I have an older sister who eats like this and she lost a ton of weight! Loved the peaches...

    Girl ... I don't think I could do that diet. I try to eat responsibly and not over-indulge. I hope that's good enough.

  6. I love kale chips! And I haven't tried the cauliflower rice yet. Zucchini noodles are our new thing. :)
